Crab Quiche
Pastry for 9 inch pie shell
2 cups of canned crabmeat drained
1 cup Grated medium cheddar cheese
3 Sliced green onions
3 Large eggs
2 tbs flour
1/4 tsp dry mustard powder
1 cup light cream
Line Pie plate with dough (Do not prick holes in it.)
Sprinkle crabmeat in shell.
Spread Cheese and onions over crabmeat.
Beat eggs, flour and mustard in bowl. Add cream
Pour mixture over crab mixture in pie plate
Bake in 350F oven for about 40 minutes until set.
Quiche Lorraine
Pastry for 9 inch pie shell
8 slices bacon diced
8 ounces natural Swiss cheese grated
1 tbs flour
1/2 tsp salt
Dash nutmeg
3 Beaten eggs
13/4 cups milk
Bake pastry shell in hot oven until lightly browned 450F
Remove from oven. Reduce heat to 325F
Cook bacon till crisp; drain and crumble; reserve 2 tbs.
Place bacon in pie shell add cheese. Combine remaining
ingredients pour over.
Bake in oven for 35 to 40 minutes until set. Garnish with
remaining bacon
Let cool 10 to 15 minutes before serving. Serves 6
